Ingredients
For the Cream Sauce
1 block extra firm tofu
3 tbsp lemon juice
2 tbsp olive oil
1 tbsp nutritional yeast
1 garlic cove or garlic powder
Oregano
For the Pasta
fresh chives or green onion ( optional)
2-3 heaping handfuls of Spinach or arugula
Gluten-Free Banza Pasta or other lentil pasta
1 container fresh cherry tomatoes
Optional for higher protein – ground beef, bison, or lean ground turkey
Directions
Preheat oven to 400 degrees. Blend the Cream Sauce ingredients in a blender until smooth. Place the blended cream sauce in the middle of a baking sheet, surround the cream sauce with rinsed cherry tomatoes. Drizzle 1 tsp to 1 tbsp of olive oil on all and sprinkle with more oregano (optional)
Bake in the oven for 30 minutes.
Meanwhile, boil the water for your pasta. I recommend using banza ziti noodles or other pasta. Banza or lentil pasta will give you higher protein for this meal.
If you are adding meat, brown the meat while the cream sauce is in the oven.
Once the sauce and tomatoes are done, mix in 3 big heaping handfuls of spinach or arugula and toss around. Tada! The sauce is done. Now assemble by adding pasta, the sauce, and your meat if necessary. This is a SUPER high-protein dish if you use protein noodles, meat, and the sauce.
